I had never heard of "sock blanks" before and thought I had seen everything on your website! This is going to be great for me because I rarely find a self-striping yarn where I like ALL the colors together. This is a great way to design your own!
Adding vinegar directly to the dye stock makes it "set" in place immediately, which gives you nicely defined lines. If you don't add vinegar to your dye stock, the dyes will migrate and intermingle, giving you a blended effect. If you don't add vinegar to the dye stock, you'll want to make sure that you spray the blank with vinegar before steaming it so that the colors don't migrate further.
