Last year I have had two bulging cans. One was sweet potatoes and the other was green beans, both purchased cans of food. In my experience, the "safety" of purchased food is going down.
I have been transitioning to meat I pressure can and all other items I buy for long term storage in #10 cans which have been dehydrated or freeze dried. I like the Thrive brand because it tastes the best to us.

@APhilCollinsFan I don't purchase damaged cans ever for food storage. Also cans are no longer steel so they last a whole lot less nowadays when exposed to any elements. Blessings!

No noticeable damage, went to open it and the lid kind of flew off! The fall had loosened the seal enough to break the seal. So we are wary of the pull tops now.

@03SSMontecarlo I keep my home canned goods on a 5 year rotation schedule after that the food texture inside starts to chage it's still good to eat but a softer texture. You test for spoilage first by examining the jar for bubbles loose lid (see my video watch?v=6-bgUAkcMQM). Then once you open the jar smell the product and taste. Usually you will loose the lid or see visual evidence of spoilage by the time you get to the tasting you should pretty well know that it's still good. Blessings!

i think you got it wrong at 4:50 they can only get if there is NO air (anaerobic) thats why killing the spores is so important if air was a requirement for their growth (aerobic) then normal water bath canning would be fine for almost all food high or low acid. you may want to adjust your video "Botulism, also known as botulinus intoxication is a rare but serious paralytic illness caused by botulinum toxin, which is produced by the bacterium Clostridium botulinum under anaerobic conditions."

Good info. How long does it take for the spoilage to occur if you home canned something incorrectly? I am checking all my stuff about once a week, so far so good..I have done chicken, hamburger and pinto beans so far. No fruit yet.

@gardenvespers777 As Psalm953 stated your local county extension agency and have it tested. It only costs a couple of dollars for them to test it. You can find them online and you can also mail it to them so either do it in off season or purchase a spare and rotate. Blessings!
This is excellent much needed information. I have canned for years and kept with current reccomendations, but a lot of people do not. I get so tired of hearing people tell me, "my grandmother did it this way and no one ever got sick." So did mine, but why take the chance of going against current reccomendations and risking making your family and friends sick or killing them? Thank you so much for your channel. Even we experienced canners can learn from you.
its also good to get the word out that botulism is present all around us naturally. thats why food MUST be processed properly and why being aware of the jars/cans youre opening is crucial. If it seems funky or off, it sure as hell isn't worth it. Toss it if youre unsure or worried about a food's origin. Going hungry until you can secure safe food is unquestionably better than being dead. Really, it is. Really.
I was looking at the MainStays jars & planning to pick up a case in each size - so if I'm understanding what I saw the jars are ok but I should go with a different top instead?

Well said. It's annoying to hear people talking about canned goods spoiling at their best buy date. Nothing is going to grow in a container where everything was killed after it was permanently sealed. The oldest known canned food to be eaten was a 100 year old can of meat and it was not 'spoiled'.
I've had tin can canned goods last for years with nothing wrong with them on the inside, no mushy food, taste just as good as a new can. I've also had tin canned goods that have gone bad too, the seal will break and they leak, or they bulge out really bad. I usually use the rule don't buy it if its dented. the seal may be damaged.
With all the misinformation I've been hearing on this subject lately, it's refreshing to see your video, thoughtfully presenting the facts. Thanks for all your time and effort.

I only keep my canned stuff for about 4 years. I have found that it kind of starts loosing its flavor. Tastes kind of flat when it gets that old.

we just threw out a bunch of stuff my grandmother canned....back in 1963...I ain't eatin it!
of course some of the items were completely dried out, and the other stuff was canned in non traditional jars ( mayo, mustard, tea etc. )
my mom has a cabinet with more canned stuff in it..not sure if grandma canned that or not?
the beets are faded, the carrots looked ok and green beans looked ok...still not sure I'd eat em.
