I have not long been introduced to Thai food but I made this Panang curry at home and I enjoyed it very much. I guess it makes it easier when you have a Thai food shop near your home.
even though i have not made this .. i have looked at many videos and am a panang chicken lover.. I can tell this is what I want to try and make. Simple yet spot on.
This is exactly how I made it except I add a tbsp of peanut butter, and instead of palm sugar I use a brown sugar. I think the fish oil is essential to a nice flavour, and I add a little lime juice instead of kaffir lime leaves, since they can sometimes be hard to find.
@vanwendy1 You certainly do, it's the bowl of brown liquid, palm sugar. You get it in a big ol' block at the store and soften it with warm water. Wonderful sugar for all Thai/Viet/Cambodian dishes.

i like to use chicken stock to tin it out and i put in curry powder rather than paste i also use peppers and cilantro with time
