Parotta taste so much better then the Paratha ..ewww I hate chapatees and parathas..yukky. But whole wheat flour is more natural but the taste just yuks me out.
Maida is the worst flour to use. Technically a whole wheat flour is used.Unfortunately ones available in USA are not the same as in India. USA wheat is called red wheat and had different texture.Better to buy chapati flour from Indian grocery shop. Paratha (not parotta) tastes best when not stretchy. I think you are confusing paratha from Bhatura.
Being a north indian rom Paratha/chapati region I can tell you that maida is the worst thing to use.
@alkasingal Its a south indian recipe - not north indian. So, it will be different. And, having lived in south india for 2 years, the stretchy type tastes very good.
Nice work, we liked your video very much so we embedded it on ChefCommons . com w/ link back and reference to Youtube. (Let us know if you don't wish for it to be featured)

is maida the most ideal flour to make

Ofcourse maida would be the best. All purpose works but does not streach much.
