  • I've worked in a kitchen for years and what you need is skill with a knife, skilled taste buds, a good eye, an accurate sense of time, and most importantly tolerance to heat. 400 degree tandoor isn't even the regular temperature of a simple pizza oven.

  • my takeway has got 10 variety of nans. the hardest to cook is tomato nan, and keema nan, if you fuck it up, they will split, and all the filling will end in the clayoven.

  • That nan which came out in pieaces was due to the fact that either the clay oven as too cold, or the water he aplied was bit too much. Heat of the clay oven dictates amount of water used at the back of rolled out nan. Only difficult part in the clay oven is managing the heat in clay oven, and coping with cooking of your arms, hands, and slow cooking of ur face, other then that nothing hard. lmao. I worked as a clayoven chef for five years, I could train gordon ramsay in ten mins to make ...

    thats cooked, the mixing hasnt been done properly, or the mince meat is old, day old, thats why its red. In clay oven rarely things come out raw.

    Nah it isnt, I would make better, you will look at them and feel like eating them, but this guy probally made the dow few hours ago and used it without remaking it on the spot. I normally make the dows, then remake the dow when i am about to use it, that way the extra air in it is pushed out, and nans are white in texture, and look beautiful. I will give this guys nans 7 out of ten in comparision to what i make.

    You have to pic it from bottom before it catches fire, otherwise if it catches fire the temperture of the clayoven will go very high and nans will burn, and the black smoke will darken the clayoven wall, so the nans will be black from behind, and in a busy time, you have to quickly do what you need to keep the flow going, one person fucks up, entire kitchen suffers, so in desperation, you sort ur shit out quick or service is going to crash on your head.

  • I worked as a Tandoor Chef for six years, the pressure is phenominal, you stick six to seven nans in clay oven, roll out more, and take the others out, ... its hard, fast, hot, and its on place where the chef is really pissed off, you just going to get wacked if u fuck with the clay oven chef, Gordon Ramsay would get murdered by clayoven chef, you have to be a soilder to hack the heat, and pressure, and if someone mouths off, you just let him have it.

  • However well these chefs would cook the tandoors (mud ovens) cook the best in open air next to the fields. I don't exactly know why but my guess is that the oxygen and other factors play a role in that perfect naans and seekh kebabs and chicken tikkas. Which I have never been able to do indoors.
