As someone who sells wild salmon, it sucks that it's expensive, but you really don't wanna buy cheap salmon. There's probably a reason it's being discounted (good to find out, lol). :/ Unless you're sound of mind buying cheap meat.
Smoked salmon I think is absolutely delicious. I mean, in addition to regular fillets. It's good food for your brain, as well as helping to reduce LDL cholesterol.
@DIRTEDROCK Most all wild fish are prone to parasites but, as mentioned earlier in the episode, a lot of "fresh" fish is frozen, not raw. Freezing kills parasites, and thorough cooking kills any other possible bugs. Be careful to ensure that any sushi you eat is frozen prior to preparation to make extra sure any possible parasites are dead. Not all states require pre-freezing for sushi-grade fish.
On pieces like the first and second he showed, I prefer to use a very very hot grill with flavorful woodchips in it, and give it marks and smoke (takes just a few seconds per set of marks). Then finish it off in the oven.

all of them... the pan fried one would have soggy skin the way he cooked it, and don't get me started on that cure he put on the top... otherwise AB is awesome!!! lets just say that fish is not his strong point...

wish salmon wasnt so expensive. i found whole wild salmon at ralphs for 2 dollars a pound months ago, but i dont think that'll ever happen again :(

I pan fried some salmon yesterday this was and the skin was not soggy, not that I eat it anyway.
