  • What percent of ethanol is best for extracting anthocyanin from the cabbage: 70% or 100% ethanol? Does it even matter?

  • @MaXxChiX Nvm! I found the answer.

  • @MaXxChiX For best results use 1:99 ratio of HCl and ethanol, however methanol is more effective and has a lower boiling point therefore extraction requires less energy, purification is simpler by the use of methanol aswell.
