1- animal head is not 'geometrically' suitable for frying in a pan

2- boiling makes sure meat is evenly cooked inside out

3 - boiling for long period of time makes sure meat becomes loose and easy to digest while preserving nutritional value (in the sauce is Prescribed for people who suffer from a broken bone or bone degeneration - sauce is Rich in Calcium)

i learnt about this on an article on cracked. i doesn't look that bad, if you can get around the fact that you have a skull grinning at you when you finish you're meal. the gross factor to me is people eating the brain; i prefer tongue :D

I have patcha every weekend at my local Iraqi restaurant here in the UK. They make it with the head, feet, plus tripe (and various other cuts of offal) of a sheep and serve it with bread and a special mixed rice. It's a very tasty dish and I always look forward to it!
