Nice vid! We put a short cup or mug upside down in the bowl and cut the kernels off the cob while the end rests on the end of the mug. It saves the arm/wrist muscles a bit. Happy canning!

Just thought I'd mention that boiling water bath canning of corn is NEVER safe even if you use canning acid. Boiling water (212 degrees) simply can't get hot enough to kill botulism spores (240 degrees, the length of processing determined by the density of the food). So boiling corn for 3 hrs won't make it safe. I am surprised the makers of the canning acid open themselves up to such liability by having unsafe directions on their package.
@laramis Yes it is, and they still do alot of hot watering bath. But they also use pressure canners now adays...But I have seen them eat some stuff I would not and they are still alive like you said.....

Thats some nice looking corn. Nothing in the world wrong with some nubbies. After breaking off what the worms were eating on, thats all you have left sometimes. I think we've done close to 50 pints so far. Gonna do another picking towards the end of the week, then mow the stalks down. Love the video start too. ;-)

I ended up getting better culls than what I bought for us to eat in the first of the year. Hi Misty! I have a question about pressure canning. Do you have to steralize everything before you load the jars like with water canning? Or does the pressure canning steralize everything at once? Thank you very much I am a novice and just learning about canning.
@nagaempress Hi, I do not sterlize every thing first, the pressure in the canned does that, but I do wash everything first in hot soapy water....10lb. at 10 min is what it takes to sterlize the jar....

NICE! Looks like your handle on your pressure canner is doing the same thing that mine did. We had to order a replacement handle. That metal on the handle got all loose and wonky, The replacements are nice and solid. Thank you for sharing Misty, you are the best! Noreen
Wow Misty, that's a lotta corn! Looks great. Are you going to have the corn canning acid available on your website? I might get some... I normally don't like to can corn because it turns to mush. The corn in your jars looked real good. I think I'd do the pressure canning method too. Water bathing corn sounds risky ;-)

@fetch33 This is an Amish recipe. The Amish don't use pressure cans. They only do water canning- even their meats. And the are still alive.

Have you ever put the corn through a juicer it's good. After you juice it cook it on the stove for around 5 minutes gets nice and thick.
