Brill is more expensive than lemon sole, flounder, fluke and whatever else people think this is called. If that's the case, then we were wrong, the wholesalers were wrong and everyone paid far too much money for it.
I don't have any interest in how good/bad the filleting is - I merely point out what the fish is.

Jesus man! Cut a "Y" at the top of the head and then straight back to the tail. Then from head, finishing back towards tail, you cut top and bottom filets out. My 12 yr. old son can do it!
I fillet flounder all the time. They are easy in my opinion. Top fillet then lower one on the dark side then flip it over and do it again on the white side.

i know you admitted to having a blunt knife, but its always best to use a sharp one, stating the obvious.Brill is not a fish to learn to fillet, thats the job for pouting or flukes. those fillets are called quarter cut.Easiest to do but i normally do cross cut. done in two, not four. i'll post a video for you.
