On replaying it, I noticed he lets off in 1st then reapplies the power but the gear counter shifts to 2 and at the end he changes up twice after the front drops in '5th'.

Still super impressive mind.....

I built all the kit and it's a lot of work. It's very difficult to built a turbo kit. I worked many, many times for build and tune. I recommand to buy a kit. I will do that if i have another turbo bike project.
