I know 2 knights are generally supposed to be inferior to 2 bishops, but when you're playing the knight pair in an endgame, it's like there's a check and a fork on every other square...really annoying.

there are many standard ways to reply to that sort of maneuver in this situation such as Na6, or 0-0 . So I don't really see Nb5 as a threat...also, in this position black has a decent control over the dark squares and white doesn't really want to exchange off his dark-squared bishop, which would weaken the dark squares especially if black will soon be playing Nc6.
