I use a Bosch 4 inch angle grinder, with 40 and 80 grit grinding wheels, and a 40 grit cut off wheels. Then 3 different grits of sandpaper which is 40, 80, 120 grit. These steps are accepted methods that have been used for hundreds of years.
A custom knife was just made with an angle grinder in the video, all knife makers have their own methods which they like, belt grinders are often favoured, but angle grinders, bench grinders, will work and alot of people favour them, heck you can grind and profile a knife with just a hack saw and a file.

Your right. I use only a grinder on my bevels. That's just my way. Some of my bevels can't be done with a belt sander.
