My recipe is a bit different. I boil my potatoes in some salt water first. Then I chop some onion, garlic, and fresh chili pepper, and fry it in a wok for 1 minute. Then I add the boiled potatoes, and fry everything for 4 to 5 minutes. At the end, I added a mix of soy sauce, vinegar, sesame oil, fish sauce, sugar, and water, and cook it for 2-3 minutes.
Even though I don't speak the language she is talking in, it was still very easy to understand her without reading the subtitles. I guess food has it's own language.

You can certainly skip the corn starch and make it like starter. Try the recipe either ways out and let us know how you liked it.
