Dear Mary's son . . . Here's what I learned from your video.
You are a fortunate soul to be loved and nurtured by this generous woman.
She knows in her hands how the butter, sugar, and flours should feel at every stage of blending and shaping. And she knows in her heart her dear son, all the many days and nights since you were conceived, born, and grew and as you now grow.

Appropriate piece of music for this video :-) You know what, I came here to take a look at the authentic approach to shortbread, and actually forgot to focus on that. Instead what i was captivated by was the fact that it is so cool to see how the older generation does things - still! No electric mixer for the dough, instead a potato masher! Nothing is any trouble to this generation, and it has to do with what they have been through in their life. Wonderful to see you and your mum cooking!!
@trulykiwi Thanks for you comment. My Mum always said if you mix it by hand it tastes much better - although she always uses her hands so don't know how she knows this. The potato masher is her favourite cooking instrument. You should check out Mary's Bramble Jam video where the potato masher makes another cameo. All the best.
@kwkrajczar no problem at all. My grandmother used to say the same thing. However, I failed to apply any logic to the idea, and when you consider 30 mins vs 10 minutes to cream butter and sugar, hand vs machine, lol - I choose the machine. I have done both ways many times, and I can honestly say I don't notice a flavour difference. I will check out the jam video - thanks :)

@SearchingGirl09 - rice flour is made from rice and makes baked goods a bit softer. Substitutes include cake flour, pastry flour or barley flour although never tried the recipe with these. You should be able to find rice flour in your local grocery store. Good luck.

@kwkrajczar Woops - I made a mistake on the conversion. My Mum meant 0.75c of berry sugar and rice flour (she just looks at the measuring cup which has ounces as a measurement of volume and not weight). So the correct weight measurements should be:

@yatizain69 berry sugar is the same as castor sugar (I think they call it castor sugar in Scotland). Good luck with the recipe.

1 lb butter = 450g
6oz berry sugar = 170g
6oz rice flour = 170g
3.25c flour = 400g

450g butter
120g berry sugar
