I've used plain cotton, usually muslin, rather than bandage material/guaze and this works fine. For the end band I've also taken a piece of bookbinding cloth and have rolled it over a thick piece of twine. It isn't as pretty as your use of embroidery cotton, but it is easier. i do end tabs while sewing the signatures together. a piece of ribon that hangs over the edge of the signature very slightly, and with each pass of the thread i wrap it around and through the ribbon at either side.

tip: for end tabs, you can glue and roll an ultra thin piece of leather or any heavy fabric, around a short string. Let it dry, then cut the string off the ends.
The tapes are typically linen, cotton, or rarely vellum. You can buy tape that is specifically made for bookbinding, or cut some strips out of shirting or lightweight cotton. The "bandage" material is called spine reinforcement, and is typically a loose weave material called "mull," but lightweight linen is also used in fine bindings.
My suggestion for the headband is to sew it directly into the signatures/bookblock, or onto a piece of cloth..there is a stitch specificially for headbands.

You can always use scrap paper, like what you put on the spine, if you don't have any bandage material.
