Thank you for this video. If you ever have to make madeleines in large quantities you can make a slurry of melted butter and flour and paint the molds with a pastry brush.
I once made about 144 madeleines for an AIDS charity using this technique. I was told that the madelienes were so popular that the patients were stealing them from one another.
hi keiko.... i tried the recipe last weekend and it was really really good... the recipe was easy to follow and result was great. I tried to replace some flour with coco powder and added some melted chocolate to make chocolate madeleines... didnt taste as nice. For now, i will stick to the "real" madelines.... thanks again for the recipe

To make sure that everything is nicely dusted with flour. Madeleines are pretty sticky and you would have a hard time getting them out of the pan, otherwise. :)
Is that baking soda you're mixing with the flour?

@wodezhu - Yes, you can. :) ...although... the intense butter flavor is the main characteristic of "real" madleines.
