Gravity holds it up. The real secret is the wooden scaffolding that has been removed. It holds up the curving-in columns, until the keystone, or capstone, is in place. It pushes down and sideways. The sideways push is resisted by the weight of the columns, which includes the weight of the capstone.
Since the capstone can't make a hole to fall through, the downward push of its weight holds it up.
