I have the same problem. I play classical guitar and avery time I press REC my fingers 'forget' how to play or my mind gets blocked. I will try keeping the mic on.
The only ones I ever heard who could combine accuracy with a moving performance were Horowitz and Van Cliburn. Those guys never missed. Amazing. Accuracy does not a performance make. But accuracy combined with emotion, soul and heart now that's what I like to hear. And sadly we hear far too little of it anymore.
On the nose, Margaret. It's been years, but I know exactly what you mean. As we practice, and when we play for fun, we hear it as we like to hear it. We're impressed by how well we're playing.
On stage, under the pressure of performing for the public, or, as you say, for a critical teacher who caught you being sloppy, we can suddenly hear every ugly subtle nuance. We'll hear a mismatch that even our teachers can't hear.
So true. "We hear what we want to hear"... not only for music :-).
Self recording is the best way to improve ourselves. Again, not only for music.

I make more mistakes everytime I try to record my playing, than I do when I am just playing.

Maybe if you just keep the microphone on, recording, and forget about it. You might get something.
Knowing that you are recording breaks up your focus on the music . . .
