Declan, You hit the nail on the head when you mentioned the traditional way of making the stew. Just a few ingredients and cook slow, slow, slow. Every recipe for the ' irish stew' today is different. I even saw one that says to add chilies, ha ha.

Declan - the Romans never made it to Ireland. Nice interpretation of Irish stew...not unlike what most Irish born people grew up with.
