U should take 3 pictures with 3 different exposures :
EV0, EV+2, EV-2
in some cameras u can do it with AEB option

do you need photomatix or will photoshop cs3 extended do the job?

you can create hdr photos with photoshop, however ive found that photomatix does a lot better job..... except with the trial, a watermark will be left on your photos once processed in photomatix. thats kinda the downside.
