Basically the iPhone and the surrounding air is way hotter than the liquid nitrogen (which has a boiling point of -321 degrees) so it was the liquid nitrogen that was boiling away. Not the iPhone. The iPhone is being cooled dramatically which would cause the molecules in the components, plastic, glass, etc to slow down and become extremely brittle instead of being heated up and smoking.
