This recipe is good w/ vanilla ice cream too, once bananas is done! Melt butter & add brown sugar to make carmel sauce to pour over the fried bananas w/ scoop ice cream on top...mmmmh delicious!!

The bananas you used are called Macho Platanos or Macho Bananas as it is known in Latin America. They're really big bananas compared to the common ones we usually eat.
They are really great when deep fried as chef Kai has done.

yes, use plantains that have yellow peels, the brown ones are too soft.

the oil needs to be very hot first. test the temperature by dropping in a tiny bit of the batter - if it floats then it's ready for the bananas
