@9aspengold5 depends on the soil the growers use, a more nitrogen rich soil creates the darker mushrooms you are used to. Since mushrooms don't last too terribly long once packaged, all the mushrooms in your area probably come the same grower, and his from another grower closer to his area. I prefer the darker ones too, they have more earthy flavor, but the white ones tend to take on more of the flavors you add to them.

What were the ingredients you mixed with the balsamic? Any suggestions on a really good balsamic and seed mustard? How much salt and what type did you use on the cucumbers?

You should seriously have a show on food network! First of all, you make amazing food! Secondly, we need someone on food network that is a vegetarian/vegan that can show every vegetarian/vegan good foods to make, and show meat eaters how delicious vegetarian food is.

This is awesome, and considering that portobello mushrooms have a very beefy taste it's really only the texture that'll be different. The Schneider brand meatless burgers are amazing, they taste 100% real.

those were mislabeled mushrooms. I have cooked with Portobello mushrooms for years and never saw any that looked like huge white mushrooms !!
