If you want to use more than 1 point on each hand, use an IR LED glove.
This is simple to make : take a glove, fix a battery older on it, fix an IR LED on two fingers and a little trigger on palm.
When you close your other fingers on your palm, it trigger the IR LEDs.
I said two fingers only on each hand, because one wiimote can only track 4 points at the same time (if i remember well).
Thumb and index are the usual suspects ;)
I will try this with windows 7 and Usine Sensomusic :D

@Pipotron3000 Thats on the wii only 4 points....
the wiimote is just a camera so with this software u can theoretically track as many points as the pixels oin the camera can define...
