This video is very interesting and educational. Now I know how to cook not judt peking duck but anykind. Because I'm a filipino maybe I'll try the philippine duck or if I can find a pinoy-chinese (peking) duck much better for experimental cooking. Thank for this video upload.

where i go they cut the skin in front of us then we eat it with pancakes the second course they turn it into a stir fry then we eat it like tacos with cabbage mmm
yah that's traditioinal but i notice so many places now don't cause i guess people aren't fulling trained to make it look good while cutting it lol. I notice those places it always seem smaller then usual...someone's been eating it lol
It's so good to see a chef like this one generous enough to share real trade secrets so openly, rather than dumbed down highly edited versions for those that wouldn't know the difference.

The sad part is that these chinese seem to be palying the part. Sad indeed. I cook both the Chinese and the French. It is not the famous Peking Duck. Any other is just a duck. Peking duck has been around for more than a thousand air and it shall remain.
Actually the Chinese have taken a lot of Japanese and Korean cooking techniques and dishes - and the other way around. Asia lends itself to a varity of dishes - they just add their own spin to it. So it's not so unusual.

The TV interview guy is smart that he just like the chinese chef tell the story. You can't ask a person complex question, when the person is not fluent in English. But if you listen carefully, you can understand what the chef is talking about.
If you are from US, you wouldn't make fun of the chef English, because in US, many older immigrant folks are non English educated. American people are the most tolerant and patient people when come to communicating with different countries English accents.
This food video is well done. The background music is perfect for enjoying a chinese meals with chinese tea. Normally, chinese chef wouldn't show you and tell you how it is made, but this chef is telling all, shows that he is a confident and skillful chef.
You know what would be fun? Go to a restaurant, order Peking Duck, have your/other kid(s) eat it, and then say: Was Donald tasty? Your eating Donald Duck.

The guy with the microphone, he scratches the back of his head, sometimes he cough and talks a lot, lucky for the customer the chef deep fried it, or else a lot of slimey thing in it. I would call that entree deep fried smoked T duck...

actually this is not the traditional peking duck but it is much crispier maybe better. It works well in pancakes.

This is NOT peking duck. This is 樟茶鸭. A Szechwanese dish. Hunan Prov borders Szechwan and they cook in similar ways. Both are southern provinces.
