If he did it without bursting the insides, then he would be talented, but clearly I saw some of the roe leak and some of the guts too, so either he is planning to do something to the salmon fillets that shits the flavour out of it, or he is paid by the fillet and doesn't give a fuck.

I've seen a few gutting methods, but Japanese styles emphasise the cleanliness of the gut, especially as a burst gut can spoil flavour in more delicate dishes.
I never said you couldn't gut fish, I'm sure you can do a great job, but this guy can't.

next time remove the guts before filleting. They can burst and leave a foul taste when cooking, you wouldn't burst the roe and liver too.
