For real you don´t burn the sugar on the spoon, but you put a bit of water on the sugar. The water mixt with the absinthe make the "louche" efect. The sugar is only for the taste.This is czech staff, this burning sugar.

that's not the proper way to prepare an absinthe drink ! you need an absinthe fountain full of cold water and the sugar cube melts as this water pours into the glass, no fire involved !
