the asian guy is very fluid. obviously hes trained in some martial arts, but the rest of the jedi actors need more vigor. it will help A LOT in the believability. Dont be afraid to get hit a few times swinging those things around, its critical to your audience!

well, im a fan of KOTOR and Jedi Academy :P but there was an apprentice. He was going to battle some other Jedi one-on-one in an elaborately planned climax with unrestrained Sith extras that would die and lend more death and saber varieties, but we never got around to it. it has become such a pain in the ass to get everyone together that I've scrapped the rest, replacing it with just the duels in a plotless RVD style battle (which is really all that people on youtube care about).

first off, you need Adobe After Effects. then you should check out the website of the totally awesome Ryan Wieber, creator of the famous "Ryan vs Dorkman" series :D youtube wont let me post a link, so try googling the name.

since i personally learn better by example, i would suggest the video tutorials. if all else fails, i bet several people have put them on youtube, so search "saber effect tutorial"

well, it is possible with photoshop, a although it takes longer since you cant use tweening, and I've done it with Flash before, but it doesn't look completely natural since the edges aren't blurred with the film to look like it's part of the film. you could always "share" After Effects ;)
