@highig69er Try placing ur beef under heat & see if it doesn't turn brown.If u have cooked and eaten 'Horse' mince,does it not brown under heat?There's a slight variation in cornish pie & this is that, for cornish pie the beef is uncooked before being enclosed into the pastry and gets cooked while in the oven.In baking Nigerian pie,the minced beef and veg is cook first & meat residue is drained off into the water.The real cornish pastry is often harder as the meal is actually the inner content.
Im from Sierra Leone, but American born. Got a Nigerian boyfriend and I want to cook for him more. This really helps, just wondering about quantities on the seasoning n water. I love eating west African food!!!!

How can i get my dough to be softer? it was alot of work to roll it out, i ended up using refrigerator biscuits for my 2nd batch...... and yes i did use margarine instead of butter in my dough. Also, any tips to save time when making meat pie?
@gnumommie The only way to get your dough softer is to add more water but don't go overboard with it else it will be too soft and you can't roll or lift the meatpies into the tray without them falling apart. What kind of flour did you use? I hope it is plain flour and that you used 500g of margarine for 1 kg of flour. Save time? Everything from making the filling to getting them in the oven shouldn't take more than 1 hr. You can take a break while waiting for the filling to cool down :D
@yemimylover I am always wary of using the mixer for the margarine and the flour for fear of overmixing it (when the margarine becomes too soft and oily) as this causes the dough to lose its elasticity. I usually mix the margarine and flour by hand then transfer to the mixer, add water and make the dough using the dough hook attachment.
I am Angolan and one day I surprised my hubby to be with the a plate of meat pies that I made. He loves me more 4 learning how 2 cook them and demands a weekly supply, lol. I had gotten the recipe from a different website then I saw your video and I just wanted to try your version. They are on the oven now, but they scent is so enticing. Thanks for the video. Hi there, hope i'm not bothering you? I would like to know if meat pie freezes well and for how long as i'm thinking of doing large batches for freezing? Also can plain flour be substituted for self raising flour should i run out of of baking powder?
@toebbby99 Yes I freeze my meatpie and it is still OK, just defrost at room temperature and warm it up in the microwave. The most I have kept it in the freezer is 1 month. Please use only plain flour. Most self rising flour contain yeast rather than baking powder. And they are always in much larger amounts that you need.
What about storing the dough and filling in the frig over night or in the freezer for an hour? No chicken cube or maggie in the dough either? I guess every Nigerian has their own method. Never tried it this way. Seems more convenient. I'll try and see how it taste. Thanks

I woke up @ 5am and was craving meatpie. Since I live in a place where meat pie is not readily available, I decided to make meatpie for the FIRST TIME EVER on that day! I followed your recipe to the letter and made about 25 pieces. Friends and family have eaten it with responses such as " So, who does your catering?" ( I was tickled), and "This is way better than Mr. Biggs"!!!!!.

@rajasin1000 You say when you added the fillings - does it mean it was OK when you rolled and cut it? I was going to say you didn't add enough water to the dough but if you are able to roll it and cut it then it is not that. And by falling apart do you mean crumbly or it just had holes in places? If you can provide more info, I may be able to pinpoint what happened there :) There is also a photo on my website (link under the video) that shows what the ball of dough should look like after mixing.
Next time before I buy another meat pie in London, I will think twice, can you imagine if she used an egg with blood in it, and her fingers for brushing the egg on the pastry as well.....Oooo, don't want to think about it.

My videos are for people who want to prepare these things in their home so I don't want them to think they need some hit-tech gadgets b4 they can prepare and enjoy these eg: Pot cover instead of meat pie cutter; fork for whisking instead of whisker etc. My dear don't be so worked up over these things cos you'll make yourself sick by doing that. And blood? Even if that is indeed blood, so you don't eat meat because it contains blood? It's going to be cooked/baked dear. Wow!
@ifynne1 I agree with you dear, the food/cooking is the STAR of the video not me ... lol. For the cubes, those are barely-known stock cubes that I can buy where I live. Though Maggi or Knorr brands are the most popular for Nigerian recipes, pls use any classic cubes of any brand you can buy for your meatpie filling. By classic I mean NO added flavours (crayfish, chicken etc). Crayfish flavoured cubes are best for Nigerian Soup recipes. Happy New Year to you too dear!

@cajibade Thanks dear. Like you, I'm always looking for ways to improve my cooking because with all recipes, there are many ways to cook it and arrive at the same results. Many things to add that we may not have heard of or tried. Eg, someone told me here that nutmeg is a great addition to meat pies and next time, I'll add that to my meat pies and see what it tastes like. If I see an improvement, I'll definitely share it with everybody :)
@shallyme If you want to make the classic Nigerian Meat Pie sold is exclusive eateries in Nigeria, then yes, adding or subtracting any ingredient to this recipe will ruin it. But if you want to go all adventrous with the filling, then please add whatever appeals to your taste buds :D

very lovely video. i think your vids & website are one of the most informative on nigerian recipes..you make the effort to make it easy to follow..just wondering, how many meatpies did you come out with the 1kg flour you used. Also how long did it take you to knead the dough? and when do you know the dough is ready to be rolled?..thanks!
@melantric I usually get 10 big meatpies with 1kg of flour, this depends on the size of your cutter and how flat you roll out the dough. How long it takes to mix does not matter (for me 15 mins). You know it is ready to roll when the dough looks smooth and everything is mixed well. Follow the link under the video to the Meatpie page on my website. thanks for the reply. i tried your meat pie recipes a few hours back and it came out lovely. my question is this can i increase the quantity of baking powder used so as to have a fluffier pastry? Also can i bake at 150 degrees for longer instead?
@toebbby99 I am happy to hear that the meatpie came out great :) I will advise that you use at most 3 or 4 teaspoons of baking powder for 1kg of flour. You can slow-bake at 150 degrees Centigrade for the first 15 to 20 minutes but increase for the remaining time so that the meatpie does not become damp when done :(
@toebbby99 Hi dear, for every pastry you'll bake in the oven, you must use at least one leavening ingredient (eg baking powder) so that the pastry comes out fluffy or soft. If you do not add baking powder to the Nigerian meatpie, it will come out very hard. If you can't use baking powder in your food, there are other alternatives but I honestly do not know if they will be a good match for this recipe because I have never tried them. Hope this helps.

My Mom is from Puerto Rico and she makes meat pies almost the same way. My great grand parents were from Spain, maybe Spain is close enough to Nigerian that people knew the same cultural things?

@Standardfrank You are welcome dear :) Thanks a lot for the healthy tip and information but the fact is that butter just does not work well with the Nigerian meat pie, I have tried it and it did not turn out great and it's too difficult to work it into the flour with bare hands. Great cooking, I'll encourage you to use proper utencils in your demo. Since these videos are not shot in Nigerian village, u know what I mean? the way you cut e.g. onions, potataos seems very dangerous to me with ya fingers romancing with tthe sharp knife...is not cool.

@toebbby99 Yes I freeze my meatpie and it is still OK, just defrost at room temperature and warm it up in the microwave. The most I have kept it in the freezer is 1 month. Please use only plain flour. Most self rising flour contain yeast rather than baking powder. And they are always in much larger amounts that you need.

What about storing the dough and filling in the frig over night or in the freezer for an hour? No chicken cube or maggie in the dough either? I guess every Nigerian has their own method. Never tried it this way. Seems more convenient. I'll try and see how it taste. Thanks

I woke up @ 5am and was craving meatpie. Since I live in a place where meat pie is not readily available, I decided to make meatpie for the FIRST TIME EVER on that day! I followed your recipe to the letter and made about 25 pieces. Friends and family have eaten it with responses such as " So, who does your catering?" ( I was tickled), and "This is way better than Mr. Biggs"!!!!!.

@rajasin1000 You say when you added the fillings - does it mean it was OK when you rolled and cut it? I was going to say you didn't add enough water to the dough but if you are able to roll it and cut it then it is not that. And by falling apart do you mean crumbly or it just had holes in places? If you can provide more info, I may be able to pinpoint what happened there :) There is also a photo on my website (link under the video) that shows what the ball of dough should look like after mixing.

My videos are for people who want to prepare these things in their home so I don't want them to think they need some hit-tech gadgets b4 they can prepare and enjoy these eg: Pot cover instead of meat pie cutter; fork for whisking instead of whisker etc. My dear don't be so worked up over these things cos you'll make yourself sick by doing that. And blood? Even if that is indeed blood, so you don't eat meat because it contains blood? It's going to be cooked/baked dear. Wow!

@ifynne1 I agree with you dear, the food/cooking is the STAR of the video not me ... lol. For the cubes, those are barely-known stock cubes that I can buy where I live. Though Maggi or Knorr brands are the most popular for Nigerian recipes, pls use any classic cubes of any brand you can buy for your meatpie filling. By classic I mean NO added flavours (crayfish, chicken etc). Crayfish flavoured cubes are best for Nigerian Soup recipes. Happy New Year to you too dear!

@cajibade Thanks dear. Like you, I'm always looking for ways to improve my cooking because with all recipes, there are many ways to cook it and arrive at the same results. Many things to add that we may not have heard of or tried. Eg, someone told me here that nutmeg is a great addition to meat pies and next time, I'll add that to my meat pies and see what it tastes like. If I see an improvement, I'll definitely share it with everybody :)

@shallyme If you want to make the classic Nigerian Meat Pie sold is exclusive eateries in Nigeria, then yes, adding or subtracting any ingredient to this recipe will ruin it. But if you want to go all adventrous with the filling, then please add whatever appeals to your taste buds :D

very lovely video. i think your vids & website are one of the most informative on nigerian recipes..you make the effort to make it easy to follow..just wondering, how many meatpies did you come out with the 1kg flour you used. Also how long did it take you to knead the dough? and when do you know the dough is ready to be rolled?..thanks!

@melantric I usually get 10 big meatpies with 1kg of flour, this depends on the size of your cutter and how flat you roll out the dough. How long it takes to mix does not matter (for me 15 mins). You know it is ready to roll when the dough looks smooth and everything is mixed well. Follow the link under the video to the Meatpie page on my website. @toebbby99 I am happy to hear that the meatpie came out great :) I will advise that you use at most 3 or 4 teaspoons of baking powder for 1kg of flour. You can slow-bake at 150 degrees Centigrade for the first 15 to 20 minutes but increase for the remaining time so that the meatpie does not become damp when done :(

@toebbby99 Hi dear, for every pastry you'll bake in the oven, you must use at least one leavening ingredient (eg baking powder) so that the pastry comes out fluffy or soft. If you do not add baking powder to the Nigerian meatpie, it will come out very hard. If you can't use baking powder in your food, there are other alternatives but I honestly do not know if they will be a good match for this recipe because I have never tried them. Hope this helps.

My Mom is from Puerto Rico and she makes meat pies almost the same way. My great grand parents were from Spain, maybe Spain is close enough to Nigerian that people knew the same cultural things?

@Standardfrank You are welcome dear :) Thanks a lot for the healthy tip and information but the fact is that butter just does not work well with the Nigerian meat pie, I have tried it and it did not turn out great and it's too difficult to work it into the flour with bare hands. Tried melting it a bit and the recipe was ruined. You can surely use it if you don't mind what it does to the recipe. :)
