@lilaznniko hi! the trick is to touch the index with the last finger, then feel the area just around the thumb (like in the video) - that would be just about how tender a 'rare' steak is supposed to feel like.
So as you go up through the fingers (fourth, middle, etc.) the area around the thumb would feel firmer and tighter, corresponding to the 'done-ness' of the steak. hope this is clear. :)

@csnu5 You leave it at room temperature to help it cook evenly. Otherwise you'll have a steak that's well done on the outside and raw in the middle.
