Most everyone uses a base these days. A lot of fine dining establishments do so. Doing the traditional french stuff takes a long time. A traditional glace usually takes between 1 and 3 days, you can do a demi glace in half a day or so. How fast is that stuff going to go if you are serving a set menu and you use it for your sauces?? Very fast, many places use a base these days for something or other. And he is right a good stock is gelatinous when it cools.

Things like these make cooking more convenient, and while homemade is still the best, you can't really blame those people for going for convenience. I think it's great that Marco's reaching out to those who don't want to make their own.

Both of my daughters can be seen in the new Churchill Insurance ad where the dog does a parachute jump and lands in a porcupine farm!

Definition of Jellified refers to gelatin.
BUT there's no gelatin on the ingredients list only 2 types of gum!!! Strange that Marco. Have you read the ingredients list? Or is the French for gelatin bean gum?
