  • This is sort of comical because he's said many times over that he doesn't use premade stock cubes and such to make stock but rather that he uses them as seasoning. One place that comes to mind where he explains it is on the Great British Feast.

  • Most everyone uses a base these days. A lot of fine dining establishments do so. Doing the traditional french stuff takes a long time. A traditional glace usually takes between 1 and 3 days, you can do a demi glace in half a day or so. How fast is that stuff going to go if you are serving a set menu and you use it for your sauces?? Very fast, many places use a base these days for something or other. And he is right a good stock is gelatinous when it cools.

    a lkot of fine dining restaurants use this stuff?? either you dont know fine dining or someone has been telling you tall stories. A chicken stock takes 3 hours and a veal stock takes 8 and fish stock takes 20minutes plus20 minutes off the jet. If people could make it at home what would make a restautnat special? i think its a pity such a famous chef would do this, he loeses points from people who respect him and people who buy this stuff wouldnt know who he is anyway

  • @notasdumbastherest It's for convenience's sake. Not everyone has 3 or 8 hours lying around to make stock, and most people don't even know what it should be like in the end so they don't bother to try. Don't forget, it's their choice to buy it. Things like these make cooking more convenient, and while homemade is still the best, you can't really blame those people for going for convenience. I think it's great that Marco's reaching out to those who don't want to make their own.

    Exactly, and when I have made my own stock, frankly it's not been any better than packet stocks.

    And I've usually got a half-hour window at most to cook at the end of a busy day.  Some of Marco's simple recipe solutions are devine.

  • WOW! I have no idea who this guy is, but he is creepy. I hate when this commercial comes on my tv. He looks like if you don't eat what he serves, he's going to kick your ass. This commercial is even creepier, because those kids look like younger clones of him.

  • The best thing to happen to cooking... since me. I couldnt agree more. Who cares if he endorses Knorr products; it doesnt make him any less of a great chef or a sellout. Most chefs once they reach a certain level will endorse a product at some point. I myself am a chef, and let me tell you; seasoning with base works very well. So, its not like Marco is endorsing something he doesnt believe in.  All those people calling him a sellout, need to take a trip into the real world sometime.

  • How can you say he doesn't deserve these credentials when he earned more stars, awards for one restaurant than ANY Chef in Britain, including Gordon Ramsay. The man was the youngest Chef in the world to earn 3 Michelin stars, and also taught some of the greatest chefs in the world today. If he doesn't deserve he's the best thing to cooking, since him..I dunno who else does.

  • Just thought I'd have a look to see if the Ad MY daughter Morgan appeared in was on YouTube and couldn't believe the comments that they were actually Marco's children!! I haven't found it on here yet but they used the same children for the most recent Beef Stockpot ad. All of the children belong to modelling/acting agencies and had to audition for their parts. Both of my daughters can be seen in the new Churchill Insurance ad where the dog does a parachute jump and lands in a porcupine farm!

    I prefer Sel de Mer and Les Herbes Salées.

  • This is obviously for home cooking. Yes it's artificial, yes it's not the best choice, but some people can't afford to make their own stock. SOME people actually do not have the time nor money to make it, and just because they don't have the luxury of having home-made stock doesn't mean they deserve to starve.

    From 2kg of bones you easily get 4-5 litres of stock, but the general house hold doesn't require this amount nor do they have a pot big enough to make it. So any family would be happy to use 1 kg of bones and get 2 to 2 1/2 L of stock to last them all week! WHAT A WANKER.

I was under the impression that all the best chefs hand-made their own stock from the fresh blood of the very animal they were about to cook and that no professional would be seen dead in the same kitchen as this stuff, let alone endorsing and actually cooking with it!

  • I realise that, but there are larger discrepancies between age and looks when you are younger i mean at 0:26 does that kid really look 15 -perhaps 12 pushing it; I also realise that puberty affects people at different ages, but if I were to describe a 15 year old boy and what he looks like it would be very hard to generalize as every is diverse, but a calculated guess would be that they were, perhaps taller, with a larger build and slight facial hair than the kid on the video

  • even so, it may surprise you to know that msg is natural. it's extracted from seaweed. it's boiled, the liquid solidifies, dries out and is ground. the reason is has a bad rep is because people who eat at chinese restaurants claim that they suffer from "chinese headaches" from eating msg. but take those same people and feed them something with msg in it but in another setting or form, and they couldn't tell the difference. these are the people who take medication at the first sign of a cough
