This is exactly how my MIL makes them. The only difference: No citric acid just a few ts of lemon juice instead and to prevent burns, she places the servig platter on the pot as a lid and carefully flips the whole thing....it looks like a piece of art!

Lebanese rice use the European rice and not Basmati like we do, we put meat and they normally don't
That's the difference and they use so much lemon and citrus to make it sour lol
