@jamin3d Yes - and you can actually order your coffee by the prep - pour over or press pot, etc. I love that the customer can choose and that they accommodate that. - Kat
@SpiritedViper I did get a new laptop! The benefit of which is that even though it takes forever to process it in HD, it doesn't take down my entire computer so I'm able to multi-task!! :) - Kat

This is a cafe! Too bad im in VA im missing some great Seattle coffee. Andrew reminds me a lot of myself, I really push method consistency and extraction yield. His expressions remind me a lot of Velton.
@ktFoxtail I too am in VA and have yet to find a local cafe that doesn't remind me of a Starbucks from 10 years ago. I have found a vibrant coffee culture in my recent trips to San Diego, but I am looking for a good local (anywhere in Virginia) roaster. Do you have any leads??
@ktFoxtail Yeah, he is really great -- definitely enjoyed the field trip and we learned a lot! I wanted to film he & Michael (the other barista) doing their Mojo Extract analysis but they were so busy it was difficult to do so. Hoping we can head back and spend more time with them - Kat
I have some recommendations for him. Try other types of brewing methods, not just with the smart brewers. French press filtered (extra filter that removes the soot), Hario manual pour over, and he should really think about getting bottomless (naked) portafilters. I'm a big believer on the bottomless. Ever since I switched to one, my shots have improved drastically. Each method yields a different taste, brings out more subtle notes, makes a coffee richer, or gives it more body.

Is Andrew a Chemist? He really incorporates a lot of scientific techniques into his work! I suppose its easy to reproduce a desired result.
