Steve Irwin died to a Sting Ray, extremely different thing. They live on the bottom, feeding on shellfish/etc mantas are generally in 'mid water' and are filter feeders, like whales.
They're not agressive in the least - mantas especially. Irwin most likely scared the stingray that got him (quite possibly accidenally, they can be tricky to spot if you're not looking for them, they kinda bury themselves inthe sand) - it's a defensive thing. Generally, they'll just scoot away if you bother them
I saw a special on Animal planet that showed manta rays having sharp barbs on there tails. It is so sharp, it can go through a human.
Maori warriors use to use the barbs in their weapons. And some still do make ancient weapons using manta ray barbs.

Night diving looks scary. I dived once on vacation in Hawaii, but can't imagine doing it at night, unless you really know what you are doing.
