You don't NEED both, either type will do. Stone is much better for grinding spices and tough woody stuff like ginger. It can also be used to make fishcakes, meatballs, sausagemeat etc. Wood is more gentle and can be better for smashing up herbs, garlic etc and making dips and dressings where you want a bit more control.
(I live in Thailand where the mortar and pestle is a way of life, and Jamie's tips are spot on)

...Making your own spice mixture (for example) from whole spices (whole seeds) is 100 times better/tastier than using purchased powdered spices or powdered spice mixes.
That goes for making your own marinade & flavored oils too.

In some traditions a specific set would only be used for specific jobs, and not others. Same as you don't normally use the same grinder/ mill for coffee and spices. Beware that the set you use is food safe. You can get ornamental sets made out of exotic woods that although pretty, are toxic enough that they can make you sick or worse.
