  • Okay, I soaked some raw, organic almonds the other day. I processed it in a $35 food processor. It turned into meal. Are you suggesting that allowing it to go longer would make it creamier? Also, I just heard you say that almonds are different. Is this because macadamias have a higher fat content? I am thinking yes...

  • Add a tsp. of olive oil to every 2 cups of raw unprocessed nuts.

  • Raw means uncooked or anything that does not destroy the essential enzymes in the food through heat. Nut Butters are raw.

  • seriously, why would you criticize what he is doing? The only ingredients in this were raw macadamia nuts. Nothing else. He should be congratulated for passing on these amazing recipes.

  • This "butter" "process" integrates an intensely violent energy into the nuts to break down the fibre to create the butter. That is why it is a stretch to call the result raw. Uncooked, yes, but raw... that's definitely stretching it a bit. Forget about words and look at whats happening.

  • It certainly is not a natural process... in the way that heating food is. It is transformed unnaturally. Raw macadamia nuts are what you buy in the bag.

  • Dude, seriously, when the macadamias are chopped up, the oils in the nuts are what make the buttery substance, its not breaking down the fiber, it's just like make whipped cream. And yes, it is very natural. Ever crushed up nuts of your own?

  • Usually the reason we cook food is to break down the fibre to make it more digestible (think of potato, steak, kale, onion etc.) and therefore subjecting food to 100 degrees is also "processing" food. Yes, "technically" it is a different to raise food through 100 degrees than to expose it to thousands of rotations of very sharp blades at high speed in a very confined space... (though the amount of energy in watts/joules applied *directly* to break down the fibre may be similar) ... continued...

  • the macadamias have to become VERY intimate with sharp blades spinning tens of thousands of times to achieve this "butter"... is this to be ignored or is this an ingredient - to call any food "raw" after being transformed with such energy integrated may be stretching it a bit.

  • using a food processor is just that processing food. Cooking food is utilizing a heat or smoke source in which to change the food by means of temperature usually greater than 100 degrees. This is in no means "stretching it a bit.

  • really? people with such perversely strict standards excite me.. I think it's raw but maybe less "whole" though it still has all the parts it's certainly easier to digest.. anyway it's god to have a diverse diet to satisfy all nutrient cravings and our human eclectic palette...

  • @yangzone - calm down, it's only nut butter! Has it been cooked, no...therefore it is raw. Chill out, your 'negative energy' is doing more harm than macadamias becomming intimate with sharp blades :-\

  • I have a really small food processor. Could I make nut butters in it. Your processor looks really industrialized mine not so much. I dont want to damage it.

  • Hi, I am not sure how your food processor would go. I am using a Magimix 5200 which has a 1100W motor. To be on the safe side I would probably not try in a small low powered food processor.

  • Good question: I have only tried this in my Magimix. It may be a bit tough on smaller models

  • beautifully simple. I don't think my food processor would do that because everything flies onto the edges, but I bed my high speed blender would do the job. :)

  • Perfect, just what I needed. There are some recipes that state the nuts should be roasted but will look forward to trying this with raw nuts.

  • It works for Brazil nuts and almonds - i haven't tried cashews. I will give it a go.

  • That's easy! Will it work with cashew nuts? Or is that different?

  • it will work. u wanna know the definitive test. take your nut and press it hardly against white paper and try to write slowly. if the paper changes translucency then its good to go. the idea here is the fat or oil content; the higher the better. almonds as you know are very dry while macadamia are the oiliest.
