  • crack rocks jk... its a rock salt called tesquequite or something like that.. some of it is boiled down with tomatio skins and the resulting water/juice is added to the masa

  • They look amazing. I lived in Guatemala for 2 years and ate tamales and chuchitos every day. I get all the ingredients in Florida when i visit my Mun but they never turn out right. Maybe its something to do with the water in Ireland !! ha ha

    The easiest way to do the masa for the tamales is by going to a tortelleria or corn tortilla factory to pick up the dough. It saves you the trouble of making mistakes on whether the flour has enough shortning and boiling water or not. The dried corn leaves are what is used for wrapping the tamales. But you can use platano de manzano leaves too to spread the masa then the prepared guisado de pollo and roll it up.

    After they are ready, you use the same water broth where you boil the chicken to add to a deep pan and steem the tamales. um check the recepe for the right time and temperature.

    and you'll have tamales aroma around the house.
