So, to you I'd say "Desu yo ne?" because I don't know you, and to say, my younger brother, I'd say "Da yo ne?"

Adding "da" or "dayo ne" is masculine talk.
Japanese will think you are weird if you use it.
Girls usually use "ne" or "wa ne" at the end of sentences.

でしょう is a formal version of だろう. To me those words add some uncertainty, like "I wonder" or "It seems that..."
For example you could say something like:
今年は日本に行けるのだろうか
I wonder if I can go to Japan this year?
