Can you steam them? and why do they have to be damp before you wrap them in foil i cant really cook that well so im gonna make this everyday

I making sweet potatoes for a thanksgiving dinner. I wanted to make my Aunt Jeanette's sweet potatoes and this is how she makes them expect she doesn't use cheese in hers, but they are the best this way.

Anyone else spot the cat walking behind near the end when the block of Parmesan is being shaved into the mash? Mine always appear when there's cheese around too.
