You should have softened the cream cheese before putting it into the mixing bowl. It mixes better that way. Just 30 seconds in the microwave should do the trick. Also, cheesecakes turn out much better with a spring foam pan.
@NaomiChambers I enjoy using the glass pan so you can see the different layers after you're done cooking it, and it comes out very very good after it is refrigerated, and certainly softened cream cheese mixes better, just take it out of the refrigerator about a half an hour before mixing! :)
I have only made one cheesecake which had two layers. Even with the springfoam pan, it is hard to see the layers even after the cake has been removed from the pan
By the way, someone walking in on me while filming would freak me out beyond words. You handled it very well. I've been known to make everyone leave the house when I'm making a video. :]

I've never heard of a turtle cheesecake, but then, until I visited your country I'd never heard of key lime pie either! Love it! I do remember experiencing a yummy dessert made with oreos and cream as well! Oh - and a chocolate cake in Palm Springs called a Blackout - now that was something else again! But I love cheescake - yes!
