  • @jayceevee86 Afraid not. What makes you gain or lose fat is how many calories you eat, compared to how many calories you burn. You can be fat with only eating protein. Protein has the same amount of calories as carbohydrates, but our bodies are designed to use it for repair and growth, rather than energy like carbs. So protein does not leave you feeling as energetic as carbs do.

  • @tagert24 I'm afraid that you are wrong dear sir. When you only eat meat and cut out all carbohydrates, what happens is that the body stops burning carbs for energy, and start burning fat instead, causing intense weight loss. It's called the Atkins diet and it limits carbs to 20g a day, but advises to eat a lot of fatty foods. Within the first 2 weeks you can lose +10 lbs without exercising.

  • @AlmenAE from what I've heard it stops the meat juices from running out all over the place if you let it rest (the meat reabsorbs the juices)....therefor giving you a juicier and more tasty peice of meat

  • @AlmenAE The meat is going to keep cooking even when its sitting outside of the hot oven. If you slice it while its hot you risk all the juices being released onto the cutting board and the duck becoming dry.

  • Chicken can be eaten rare if cleaned and washed properly, you'd have to brine it in really salty water. The problem is just that chicken tastes like shit if it's anything less than done.

  • @robbyjai Actually, he's right about the Salmonella. Immersion in a saline solution will prevent most Salmonella cells from properly adhering to the chicken. Note that some cells will still attach, and that this process does not necessarily make it safe to eat--only safER. I don't know about E. coli or any other bacteria, however.

    Anyway, I can't imagine eating raw chicken--even if it was positively sterile--and not being sick just due to the sheer ickiness.

  • @turtles12 I don't like uncooked fowl. It looks good to me how Ramsay did it. It's overcooked to you perhaps, but to me it looks great. Moist and slightly pink. To me overcooked would be if all the meat was dry or at least almost dry, and white/grayish-brown in colour. That stuff is to me awful, but it looks just fine to me in this one. :>

    If you really want to show off your pedantry, why not insist on an immersion circulator and vacuum chamber, with an initial process of brining and a 48 hour cooking time at 50C? You could even whack the breast into a pressure cooker for a few minutes to force moisture into the flesh, thus enabling the collagen to melt at 40C, and avoiding any tough skin.

    Or, you could just cook it.

  • @tigran914 no it can't be eaten rare... but this one isn't rare at all. Look at the coloring of the duck breast when it is raw. It's a dark red like lamb or veal... that's why it looks pink and not white like chicken would look.

The only two birds that must be well-done are chicken and turkey, and even then, not really that well-done as stated by American guidelines (these guidelines tend to overcook the birds). Gamier birds like duck, pheasants, and even ostriches tend not to be affected by bacteria found in the more common birds (chicken, turkey, and usually because of how the chicken and turkey were raised and processed).

    Some cultures in China eat chicken rare however, in America the processing plants is where the bacteria and lack of cleanliness comes from thus the USDA requires ALL american chicken to be cooked to an internal temp of no less than 160 degrees. Let rest and a carry over temp of 170 is perfect. Not dry at all..
