Just made this, I stirred the egg too much & over cooked it a bit I think, it was way too stringy. Next time I'll pour it around the pan without stirring & serve it right away. Also put way too much soy sauce in, oops. D:
@AnaLopesss Hi - You can make the broth from the cubes. I think it is usually one cup of water for each cube (check the instructions on the cube to see exactly how much water to add) so here you would want to use 4 cubes and 4 cups of water. Just Place the cubes into boiling water until they dissolve and then you can continue with this recipe :)
Also, i've tried making this a few times the past two days since my dental work still hurts (I'm very thankful for your recipe!) and I wanted to have a little bit of thicker egg to go with this delicious broth. I just made it and added a little bit of baking powder to the egg/water mixture. It's been an one of my mom's tricks, and it helps even with scrambling eggs to make them fluffier. It turned out really good!

I used the full amount of sherry and garlic, and used boullion cubes instead of broth because I was in a fix, used a whole egg and it turned out wonderfully! It was perfect for one serving. Anyway, for the broth you can use a vegetable broth and then just add in some green onion, garlic, and ginger for extra flavor :)

here's a quick tip for adding the egg if you're making a larger quantity of E.D.Soup > when adding the egg, try putting the well-beaten egg into a ziplock bag w/ a tiny hole poked into the corner of it..When adding the egg just gently squeeze the egg thru the hole into the hot stock..It creates a nice ribbon of egg & looks nice ..very non messy too.

I use a can of creamed style corn, which has enough residual starch to thicken the soup without using the corn flour and gives you Chicken and Sweetcorn soup chinese style I guess.

I use a can of creamed style corn, which has enough residual starch to thicken the soup without using the corn flour and gives you Chicken and Sweetcorn soup chinese style I guess.

@AsianCookingmadeEasy I'm glad. It's such a lovely and simple base you've shown, which lends itself to all sorts of things depending on personal preference.
Noodles, mushrooms, chicken or crab meat.
I show it to friends that don't cook, so they can surprise friends.

@gaymuraki You can use shao hsing wine, or you can leave it out. Leaving It out will change the flavor just slightly, but it will still be good :)
