They can't get close to the Buffalo's throat when he's still on his feet. The Buffalo know how to use their horns and they will gore any predator that gets close. That's why the lions attack them from behind. Their first goal is to wear down their prey, especially large prey. Then they try to cripple it, so it can't fight back. Going for the throat only works when the prey can't fight back.
