that was the absolute worst demonstration of preparing an oyster mushroom I have ever seen. When they grow in that formation you have to peel them away gently like petals.
You would actually gentle peel the mushroom into strands around ints radius, taking slightly more off the base to prevent that hard & wood stalk from ruining the texture of the dish.
When peel your mushroom down (between forefinger and thumb, like you might imagine taking petals off a flower) always take care to use gentle pressure, as damaging the fronds can cause the mushroom to oxidise to quickly
