Even a hack like my old man does a better job...faster and waste less meat...of course he says I'm too slow, but I get all the meat on the fillet and leave almost none on the bones. Since I won't eat factory farmed animals, I try not to waste the animals I will eat. And yes, my mom always removes the 'fishy' red meat and any parasites near the stomach. The cheeks are great, but I feed the carcass to the crabs.

Any fish that you catch and you want perfect fillets. The best thing to do is bleed the fish. By doing so the fillets will not have any blood stain at all. If you don't bleed them the side that is face down will be bloody. The dark meat that he removed is were the fish store their body fats. Which is actually good for you because this is were you will find your greats concentrations of Omega oils.
Have a clean bucket of cool fresh water, and keep the meat in the water when its not being Butchered. I also try to filet a live fish. these steps will keep the meat premium! waste not want not.

in his defense this is a striped bass {a fresh water fish not from the sea} no meat was wasted he did a fine job, and the fish is large and has obviously been dead and rigor mortis has set in so this is about the best anyone could do under theese circumstances
a decent job...technically all wrong...cutting towards yourself...going through while doing the tail section way too early...and while skinning the filet way too much knife work...use a better knife and pull the skin more than you move the knife...left kind of a lot of meat on the bones...but ive surely seen worse
The only fish that I know of that bleeding out or removing the heart would help save meat from breaking of blood cells would be TUNA. The faster you can bring any fish to the boat the better for the meat! The adrenalin is what creates the broken blood cells aka "the red un-eatable meat I am removing," tight, fast lines Brad!
@bigbadbrad95307 i bleed all my fish so i dont have a bloody mess when i fillet them and plus getting the meat wet with water isnt good either so i just bleed them and after done with filleting wrap them up with paper towel and take the left over blood off and then fry it up or just eat it the way it is. it isnt a bad thing to bleed fish i think it helps the taste quality give it a try and see how the difference is for yourself
Not all Striper's have perfect stripes! There are three ways to tell the difference between Striped and Hybrid Bass. 1) The shape of where the head meets the body is arched. 2)The back of the tongue has two tooth patches "holes" in a Striper and one in a Hybrid. 3) There are three spines and 11 soft rays on the anal fin, with the longest of these spines less than half the height of the anal fin.
There is way to much cross breeding to count on just the broken lateral lines.

Great Job! You were careful to get all the dark, inedible meat off and save the fantastically good white meat. For those of you reading this who catch a striped bass and want to clean and eat it make sure you get every bit of the dark meat off or the flesh will be basically inedible. If you do get it off and are left with just white meat you are in for a real treat. Great in fish and chips!
Iron Head over half of this type of fish is not eatable!!! ... other than maybe people on Survivor or those starving in China this fish un-fileted is horrible to eat. I did not waste any of the eatable filets ... next time remember only 30-40% of a fish is a filet... This video was developed to show how to filet a Striper not save the world with it.
I found bleeding the fish out helps when filleting. Virtually no blood to deal with and preserves the meat a little longer. To me it tastes a bit better too! Just my two cents.
I have to say that this guy is putting Way to much work into filleting this fish. I do this for a living at a well regarded NYC restaurant and we use the whole fillet (pin bones removed of course), skin on for pan roasting and people love it.
