You sir have a messy kitchen. Also, sodium bicarbonate is a base(weak)....not a natural alkaline. Alkalines are Sodium, Potassium, Lithium etc. in their elemental form.
the bicarb would have reacted with the acid in the coke and fizzed anyway, but I imagine that adding bicarb would bring the PH of the solution up, after all coke is roughly ph 3 anyway.

I just recently finished a batch of apple wine. I didn't use any yeast nutrient. It did take a month to finish though. Also, it's my understanding that a quick fermentation isn't always better. I guess it depends on what you are making. But am sure expensive wines aren't fermented in 3 or 4 days.
Also for the record, what makes wines expensive has nothing to do at all with how long they fermented, stop trying to guess and look it up.
Has to do with grapes used, aging, raring, volume, quanity, is it reserve or limited stocks, origins, brand name and finally, is it a good tasting wine.

man don't drink any alcohol made from sugar, it will produce some cheap rum and some methanol also if you don't do it properly.. you must of spent too much time in jail. Use some decent stuff to make your alcohol beverage, like apple juice and honey. there was a lot of alcohol because the sugar is too many!!!... the sugar of the SOFTDRINKS and the ADDED SUGAR. So it will formed a high alcohol content.

Fermentation speed is based on yeast.
Anything longer then recommended by the yeast starts to create higher alcohols and methyls.
Wine yeast is about the 14 day range.
as temperature starts to go colder, that time is reduced.
Not always good as yeast stress is a high cause for Fusil Oils.
Also some of the most expensive wines are in fact 5 day wines. and others are 30 day wines.
its all based on yeast.
Apple taking that long BTW will have a lot of bad alcohols.
apple should be 12 days tops
