@ooeyb I could be wrong but I think I found out somewhere that it was called "Cheeky Bird" and was written by Don Harper, the same guy that produced the World of Sport theme. It was only used for the 1972/73 season before being replaced by David Ordini's La Soiree. Happy to stand corrected!
Good to see a clip of Jimmy Hill there - for those who don't already know, in 1972 he was covering the Arsenal-Liverpool game for "Match of the Day" when one of the linesmen was injured. (This, of course, was in the days before 4th officials.) So, being a qualified referee himself, he volunteered to run the line, and so prevented the game from being abandoned.
