To all you guys against bread yeast, do you even know why brewers usually don't use it? I've done it several times and really doesn't alter the taste that much, especially with fruit or ginger. The reason why its not recommended is that there is no control over the results- brewers or bred yeast can make a little or a lot of alcohol. Remember, before all of the modern technology came into play, brew was made with something with sugar, some yeast and water.
Every single batch I have ever made with bread yeast came out tasting way too yeasty and like bread. Also bread yeast cant withstand as high an alcohol content as brewers yeast
If your OG was 1.030, and you fermented it all the way out, you would only get maybe 4% abv....i guess you can do what you want, its your cider. i did mine with 2 cups of corn sugar in a gallon of cider, and i got an OG of 1.090. using nottingham beer yeast i got that sucker up to 10% abv in 2 weeks. just a thought...
i heard if you use shop bought apple juice u'll 'be disappointed'. i'm in the process of growing some apple trees from seed, it'll take about 7 years to get fruiting trees (lol) but we have 2 fruiting trees in the back garden already so i think i'm gonna give making cider a go
@godkingRoss Just use 100% juice, like Mott's. As long as the only preservative is ascoribic acid (found naturally in fruit), you're fine - still all natural. Just don't go with artificial ingredients and you're fine.

Also I've found if you use non-filtered juice that has no preservatives you don't need to add sugar and it comes out sweeter.

you have to use 100% apple juice stuff that has no preservatives in it. so you best off buying apple cider not apple juice. and to increase the alcohol content you would add sugar witch ferments to alcohol. and the yeast thing if you use bread yeast it will be 4-8 % alcohol. if you use wine yeast it will be around 10-15% alcohol but only if there is enough sugar for it to reach those levels. most wine yeast have about 14% alcohol tolerance some have 17-19% they are champagne yeasts.
Honey works instead of sugar. Hstrules is right- it needs some sort of sugar. Is the juice (or drink) pasteurized? Are there any preservatives in it? If so, it can really distort a fresh taste.
to get rid of any preservatives just boil the juice for 10 or so mins, at the same time add sugar and disolve, also works for ribena dilute and my favorite, robinsons summer fruits dilute. boil 1liter of dilute add sugar and top up to 4.5 liters with cold water, ready to drink in 6 weeks.
If you can, juice REAL apples. Most bought apple juice has added sugar and won't taste as good as the real thing :) If you can find 'cider apples' they are ideal, but if you can't, use a variety of different apples, maybe a few crab apples too :P (also consider making perry, berry cider, peach cider)
hey im new to making my own cider and this may sound really stupid but to make it stronger like up to around 8 what would you have to do, and how would you get a sg of 1.050/60, completly new to me but would love to give it a try thanks
just add more sugar, try boiling one of the cartons of juice with around 2 or 3 lbs of sugar, that should be good for 8%, or you could use honey or even golden syrup the honey and the syrup take longer to ferment and clear though.
needs sugar mate, with a starting sg of 1.030 you are only looking at getting 6% tops take it upto 1.050/60, upto 10%vol. leave for a extra week, mmmmmm, enjoy.

Try searching Bruhaus on eBay, I got my airlock and stopper there for around 3$.
I've never heard of yeast like that, but if it isn't nutritional yeast it will probably work. You might want to try some dry wine yeast that you'll find on the internet or from a local brew supply shop for 1 - 2$. Bread yeast will work too but it gives the cider a sharper flavor that I wouldn't recommend.
A dj is a demijohn, don't ask why : ) You can make an air trap with some soft plastic and a rubber band around the neck. most yeast will work but it depends on the taste you want. If you crush your own apples you won't need yeast.
I use some honey with champagne yeast , ( half a cupof honey for 4 liters of apple juice) this will bring the alcohol content to 10 % and will take 3 weeks to ferment at 24*c. Normal cider can ferment in 2 weeks at 24 *. As for the bubbles, I add 1 table spoon of sugar / liter before bottling and wait at least 2 more weeks. Don't put too much sugar before bottling or the bottle might explode, you can just store the stuff in a place where it could explode without doing any damages.
this is good, as I would never found brewer yeast in my country, I have try with apple cranberry drink and get a hangover out of it.. Good stuff mate..
you can use either 100% juice (not from concentrate)or you can use normal juice it will work either way.its best to only put 4 cartons of juice in demi john initially and let it ferment for a few days and then add the final carton,reason being that the fermentation is quite fierce and if you fill it up all the way to start with the froth will force its way out of the airlock and make a right old mess.if you add half a pound of sugar you should end up with about 8%.
I gave this a shot. It worked, I have really fizzy apple cider, but man, is it ever tart! I added about a cup and a half of dextrose to 100% pure juice. Fermented a week then primed with a third of a cup dextrose and bottled. Very tart/sour apple. Might make a good mix. How do I get it sweeter next time? How much sugar?
why do you say that,you can use the juice from pulped apples if you like( i have )the result is a better cider but there is nothing wrong with making cider (or wine) from carton juice.
It'd be better if you added a fair amount of sugar and used winemakers yeast. End product would be stronger (15-18% instead of 8-9%)and just as sweet.

if it smells like bitter and sour you may have gotten some bacteria from poor cleanliness of the gear, Not much you can do about that, if it smells like farts, pour it from one container into another over and over until the smell goes away.
Use real apple juice. I noticed on your boxes of juice a label stating "50% juice". What's the other 50%? *shudder* Real juice will have a higher SG, from between 1.040-1.045 or so. Your "juice" was watered down to some extent.
Don't use bread yeast. Yeast is cheap. Very cheap. You'll get far better results using a cider, beer, or wine yeast.
Make a yeast starter. There's no better way to ensure that your yeast is viable and to protect against infection or spoilage.

ive got some going off in my pantry (juiced the apples from the tree in my garden). Added the yeast yesterday and the kids knocked it and flared up the sediment. The yeast sediment is now underneath the starch from the pressed juice. do you think this will matter?
You can buy packets of yeast that specify how much to put in on the back (per gallon). If your doing 4 gallons, your better off buying some actual Cider yeast, rather than house hold. From my experience, a 5 gallon packet is £1. So cut it like cocaine to split it. 4 Yeast Neutrient tablets should do it.
Is it normal for the yeast to collect at the bottom? I only made mine an hour or so ago and nothings happening but i think thats normal. Its just that the yeast is all settled at the bottom like sand, is that ok? Thanks.

great video man, just bottled my cider today. took about 6 days to finish fermenting. I tried some leftover from the bottling and it tastes pretty damn good. nice and dry. I did not use any yeast nutrient though,because mine was purchased 10 years ago and i wasnt sure if it was going to kill me lol :)

when brewing cider does the container need to be airtight?? im making some in a barrel but the lid has a hole in it that i covered with a teatowel would my cider still ferment properly???
sorry for late replay, yup that should be ok, but best to make a air trap to stop contamination, but that should be ok, but best step to take is put tape over the gapbut dont put the lid on tightly, just push it down slighty, when it builds perssure it'll pop it off slighty then that will be ok.... Please take hydroreadings to make sure it's finished, i shall get a new video created this month answering all the questions in this video and go mroe into detail.
thanks alot my cider is about .990 on the hidrometer but i could still hear it fizzing so i think im gonna leave it till tomorrow does it have to completely clear before i can bottle it? .. i got 22 litres of the stuff and only bout 13 litres of bottles .. i hope it comes out well.. shall i keep you posted?
yeah 0.990 is pretty good, but if it's still fizzing then leave it or stop the fermentation, but i think i have added the formula on how to work out the ABV%, yup it's up near the top.
If it's still cloudy bottle it and leave it to clear, but it's till drinable if it's not clear...
Hydrometer and cork were not in bleach/water solution but left on a kitchen counter. Wild bacteria and wild yeast enter the brew. For a better taste, I recommend making sure everything is more sanitized. I recommend the solution in your bubbler-top to contain a bit water/bleach solution.
Actually everything is steralized, never use bleach as you need 5 ml to 5 gallons of water...
And the taste is allways fine, only infections i have ever had is through air born bacteria as seen in a pic on my blog but still drinkable if you syphone of the bottom layers.
i did the same, minus the yeast nutrient and half was pinapple juice in there :) with the apple, wonder how its gona turn out :S. also fermenting orange juice lol :S lol

Using real brewing yeast will greatly improve the taste of your final product. It only costs around a dollar, so it's not expensive.

or you'll get mold
i just keep it in a two litre bottle with a plastic wrap ofer it held GENTLYith a rubberband this way gas can get out but air cant get in.

that could vary depending on sugars yeasts and other input ingredients used.. at a guess it could be 7-10% ABV

I use some honey with champagne yeast , ( half a cupof honey for 4 liters of apple juice) this will bring the alcohol content to 10 % and will take 3 weeks to ferment at 24*c. Normal cider can ferment in 2 weeks at 24 *. As for the bubbles, I add 1 table spoon of sugar / liter before bottling and wait at least 2 more weeks. Don't put too much sugar before bottling or the bottle might explode, you can just store the stuff in a place where it could explode without doing any damages.

you can use either 100% juice (not from concentrate)or you can use normal juice it will work either way.its best to only put 4 cartons of juice in demi john initially and let it ferment for a few days and then add the final carton,reason being that the fermentation is quite fierce and if you fill it up all the way to start with the froth will force its way out of the airlock and make a right old mess.if you add half a pound of sugar you should end up with about 8%.

I gave this a shot. It worked, I have really fizzy apple cider, but man, is it ever tart! I added about a cup and a half of dextrose to 100% pure juice. Fermented a week then primed with a third of a cup dextrose and bottled. Very tart/sour apple. Might make a good mix. How do I get it sweeter next time? How much sugar?

It'd be better if you added a fair amount of sugar and used winemakers yeast. End product would be stronger (15-18% instead of 8-9%)and just as sweet.

if it smells like bitter and sour you may have gotten some bacteria from poor cleanliness of the gear, Not much you can do about that, if it smells like farts, pour it from one container into another over and over until the smell goes away.

Tips:
Use real apple juice. I noticed on your boxes of juice a label stating "50% juice". What's the other 50%? *shudder* Real juice will have a higher SG, from between 1.040-1.045 or so. Your "juice" was watered down to some extent.
Don't use bread yeast. Yeast is cheap. Very cheap. You'll get far better results using a cider, beer, or wine yeast.
Make a yeast starter. There's no better way to ensure that your yeast is viable and to protect against infection or spoilage.

ive got some going off in my pantry (juiced the apples from the tree in my garden). Added the yeast yesterday and the kids knocked it and flared up the sediment. The yeast sediment is now underneath the starch from the pressed juice. do you think this will matter?

NA this wont be a problem at all, you can re-start a fermentation by shaking up the sediment so dont worry it's all ok. ^_^

You can buy packets of yeast that specify how much to put in on the back (per gallon). If your doing 4 gallons, your better off buying some actual Cider yeast, rather than house hold. From my experience, a 5 gallon packet is £1. So cut it like cocaine to split it. 4 Yeast Neutrient tablets should do it.

Is it normal for the yeast to collect at the bottom? I only made mine an hour or so ago and nothings happening but i think thats normal. Its just that the yeast is all settled at the bottom like sand, is that ok? Thanks.

great video man, just bottled my cider today. took about 6 days to finish fermenting. I tried some leftover from the bottling and it tastes pretty damn good. nice and dry. I did not use any yeast nutrient though,because mine was purchased 10 years ago and i wasnt sure if it was going to kill me lol :)
what does the yeast nutrient do in the cider? does it help in clearing or does it make it tast less yeast like?

when brewing cider does the container need to be airtight?? im making some in a barrel but the lid has a hole in it that i covered with a teatowel would my cider still ferment properly???

sorry for late replay, yup that should be ok, but best to make a air trap to stop contamination, but that should be ok, but best step to take is put tape over the gapbut dont put the lid on tightly, just push it down slighty, when it builds perssure it'll pop it off slighty then that will be ok.... Please take hydroreadings to make sure it's finished, i shall get a new video created this month answering all the questions in this video and go mroe into detail.

thanks alot my cider is about .990 on the hidrometer but i could still hear it fizzing so i think im gonna leave it till tomorrow does it have to completely clear before i can bottle it? .. i got 22 litres of the stuff and only bout 13 litres of bottles .. i hope it comes out well.. shall i keep you posted?

yeah 0.990 is pretty good, but if it's still fizzing then leave it or stop the fermentation, but i think i have added the formula on how to work out the ABV%, yup it's up near the top.
If it's still cloudy bottle it and leave it to clear, but it's till drinable if it's not clear...

Hydrometer and cork were not in bleach/water solution but left on a kitchen counter. Wild bacteria and wild yeast enter the brew. For a better taste, I recommend making sure everything is more sanitized. I recommend the solution in your bubbler-top to contain a bit water/bleach solution.

Actually everything is steralized, never use bleach as you need 5 ml to 5 gallons of water...
And the taste is allways fine, only infections i have ever had is through air born bacteria as seen in a pic on my blog but still drinkable if you syphone of the bottom layers.

Well it's ready to drink after the first week after it's fermented. But i bottled it in 2 litre coke bottles and waited for it to clear.
After that it can last for a long time.
OR
If you use bottles with crown caps they it can last a very long time...

Not needed but it helps to work out the ABV. take first one before fermenting e.g 1.30.
Take final one 0.099. (This is the readings for thsi vid)
Subtract the two left with a figure, then devid that by 7.4 so works out to be a 4% ABV. that i am perosnally looking for...
Want a higher ABV add 500G sugar or 1KG.

Sweet, i use yeast nutrient to make sure the yeats has a kick start, if you use stuff with "preservatives" it can stop fermantation.
