Actually, Tarantino didn't mean to quote the bible, he's a big Sonny Chiba fan and he got the line from a Sonny Chiba movie called Karate Kiba (The Bodyguard). Sonny Chiba quoted it from the bible, but changed "and they shall know my name is the Lord..." to "and they shall know that I am Chiba the bodyguard..." in his movie.

But all in all a very powerful passage in Ezekiel showing the vengeful side of God watered down a lot these days when you hear the Word.
